
Avocado & Cucumber Salad (Heart-Healthy)
Ingredients (2 servings):
1 ripe avocado
1 fresh cucumber
A handful of fresh herbs (dill or parsley)
1 tbsp extra-virgin olive oil
Juice of ½ lemon
A pinch of salt and black pepper
Instructions:
Cut the avocado into cubes.
Slice the cucumber thinly or into cubes.
Chop the herbs finely.
Combine everything in a bowl.
Drizzle with olive oil and lemon juice, then season with salt and pepper.
Toss gently and serve fresh.
